I import directly from Italy premium quality regional products such as cheeses and cured meats, premium pastas and rices and unusual and rare specialities.

I only use premium meats from small high quality local butchers.

I buy fish locally from the few remaining fishermen of Brighton or I source it from other fishermen in the UK.

I buy as many organic and locally produced vegetables as possible.

Therefore my menus will vary according to the seasonal availability of the ingredients.
